My husband, Brian, was diagnosed with Celiac disease back in 2000. At that time, there wasn’t a lot of information available, as the disease was considered quite rare (1 in 30,000 people). Since then, it has become much more recognized (it’s now said that 1 in 133 have the disease).
Although I’m not the celiac in the family, as a spouse (and chief cook and bottle washer), it affects my life to just about the same extent as it does Brian’s. Not only does it affect how I shop and how I cook, it also affects how I eat at home, and how I eat when we are away from home. But that’s another blog entry…
Because there is so much information already out there (just Google celiac and you see what I mean), I’m not going to spend (much) time talking about the disease itself. Instead I’m going to focus on the affect it has had on me and my husband, how we deal with it on a daily basis, share some recipes and just other bits and bobs.
If you are newly diagnosed and have stumbled across this blog, I hope it gives you some reassurance that living with celiac isn’t the end of the world and that, yes, you will eat again.
